Garlic : Garlic adds a bold and pungent aroma that enhances the overall flavour. You can also substitute with garlic powder.
Water : Water is added to blend the ingredients and adjust the quantity based on the preferred sauce consistency.
Salt and sugar : Salt and sugar are added to enhance the flavour and balances the heat of the chillies.
Vinegar : Vinegar gives a tangy flavour and it acts as a natural preservative. Add white vinegar or any vinegar of your choice. Or substitute with lemon juice.
Oil : Oil is used to saute the ingredients and also helps in preservation. Use any oil like canola oil, vegetable oil or olive oil.

Choosing chilli : Select the chillies based on your spice preference like from mild to very hot chilli. Like Indian green chilli and bell pepper for medium heat. For extra spicy, use Thai bird eye chillies. If your chillies are too hot or when you prefer mild spicy sauce, then deseed the green chillies.

Step by Step Pictures
1)Take all your ingredients. You need basic ingredients for this sauce.

2)Select the chillies based on your spice preference like from mild to very hot chilli. Like Indian green chilli and bell pepper for medium heat. For extra spicy, use Thai bird eye chillies. If your chillies are too hot or when you prefer mild spicy sauce, then deseed the green chillies.

3)Remove the stems from chillies and wash them really well.

4)Cut them into small pieces so it cooks faster and easy to blend.

5)Heat oil in a pan. Add in garlic, onions, chillies.

6)Saute them for couple of minutes until fragrant.

7)Add in sugar to taste.

8)Add salt to taste.

9)Add in water and mix well.

10)Cook until onions and chillies are cooked well. it will take around 10 minutes.

11)Now allow the mixture to cool. take the mixture in a blender.

12)Add in vinegar. This helps preserving the sauce and adds taste.

13)Blend them until creamy.

14)Thats it, your green chilli sauce is ready.

15)Enjoy.
