Ingredients

  • 1 cup red lentils rinsed
  • 1/2 cup quinoa rinsed
  • 1 medium onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1- in. fresh ginger grated
  • 1 tsp. turmeric powder
  • 1 tsp cumin
  • 1/2 tsp. smoked paprika
  • 6 cups vegetable broth
  • 1 cup coconut milk optional
  • 1 lemon juiced
  • Fresh cilantro and lemon slice for garnish

Instructions

  • In large skillet, sauté onion, carrot and celery in olive oil until softened.
  • Add garlic, ginger, turmeric, cumin and paprika. Stir until fragrant.
  • Stir in lentils, quinoa and veggie broth. Bring to boil.
  • Lower heat and simmer 25–30 min until lentils are soft and quinoa is fluffy.
  • Stir in coconut milk (if using) and lemon juice.
  • Garnish with cilantro and enjoy.
