Ingredients
Cake
- 1-1/2 cups gluten-free oat flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup coconut cream
- 1/2 cup organic sugar
- 1/4 cup coconut oil
- 1 Tbsp. psyllium husks
- 2 Tbsp. water
Oat topping
- 1 cup gluten-free rolled oats
- 2 Tbsp. coconut oil
- 1 Tbsp. organic sugar
- 1/2 tsp. vanilla
Topping
- 1 cup sliced plums
Instructions

Preheat oven to 350 degrees F. In medium bowl, mix together dry ingredients.

Stir wet ingredients into dry until well combined.

Pour into 9×13-inch baking pan.

In small bowl, mix together oats, coconut oil, sugar and vanilla extract.

Spread oat topping evenly over cake and top with sliced plums.

Bake 40 minutes until toothpick comes out clean.

Slice and serve warm. Store leftovers covered in fridge.
