Ingredients

  • 2 large very ripe bananas or 3 medium size
  • 1/3 cup melted vegan butter or dairy butter
  • 1/3 cup maple syrup
  • 2 tsp. pure vanilla extract
  • 2 organic eggs
  • 3 Tbsp. plant-based milk or dairy milk
  • 1-1/2 cups cassava flour
  • 3 tsp. baking powder
  • 1/2 tsp. Redmond Real Salt
  • 1 Tbsp. poppy seeds optional
  • 2 Tbsp. chocolate chips plus more for top
  • 1/2 cup hazelnuts chopped
  • 10 whole hazelnuts

Instructions

  • Preheat oven to 360 degrees F. Prepare an 8×5-inch loaf pan with parchment paper.
  • In large bowl, mash bananas and add eggs, maple syrup, vanilla extract, butter and milk. Mix until completely combined.
  • In medium-sized bowl, combine dry ingredients: flour, baking powder, salt and poppy seeds. Stir together.
  • Transfer dry mixture to bowl with wet ingredients. Mix well.
  • Add chopped hazelnuts and chocolate chips until incorporated.
  • Transfer mixture to prepared loaf pan. Spread batter into even layer and sprinkle top with whole hazelnuts and some more chocolate chips.
  • Bake about 50 minutes, or until toothpick inserted in bread comes out clean.
  • Let cool 20 minutes before slicing.
