Ingredients
- 2/3 cup oat flour
- 1 cup pumpkin puree
- 1 egg
- 2 Tbsp. blackstrap molasses
- 1 Tbsp. olive oil
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
Instructions

Preheat and grease waffle iron.

In small bowl, blend wet ingredients together.

Add dry ingredients to wet and mix until smooth. Batter will be thick.

Spoon 1/3 cup of batter in center of waffle iron and cook until waffle iron beeps.

Allow to cool before serving.
