Easy Zucchini Squares with Baking Mix
These easy zucchini squares made with baking mix are the perfect way to turn simple pantry staples into flavorful, savory little bites.

Ingredients
- 2 1/2 cups of shredded zucchini blotted dry with paper towels
- 6 slices of black forest ham chopped (or add another meat you prefer)
- 2 plum tomatoes, diced ( or choose another vegetable you prefer)
- 4 eggs beaten
- 1/2 cup of vegetable oil
- 1 bell pepper chopped ( or choose another vegetable you prefer)
- 1 cup of baking mix
- salt and pepper to taste
- 1/2 cup of Parmesan grated cheese
- 1/2 teaspoon each of dried basil, oregano, and parsley
- 1 teaspoon granulated garlic powder
- 1 1/2 cups of grated combination of mozzarella and provolone (or choose another cheese you prefer)
Instructions
- Preheat the oven to 350 degrees and line a 9 x 13 casserole pan with parchment paper. For thicker squares, use an 8 x 12 brownie pan.
- Beat the eggs with oil and all the seasoning until blended.
- Stir in the baking mix.
- Add the cheeses, vegetables, and meats to combine.
- Pour into the prepared pan.
- Bake until golden on top and starting to crisp up, around 30 minutes (35 to 40 minutes for thicker squares.
- Let it sit for around 8 to 10 minutes before cutting the squares.
