Ingredients
- 4 cups watermelon diced
- 1/4 cup coconut milk
- 1 Tbsp. lime juice
- 1 Tbsp. maple syrup
Instructions

Dice watermelon into small chunks and remove any seeds. Spread on baking sheet in single layer and freeze for at least 2 hours, or until solid.

Add frozen watermelon chunks to food processor or high-speed blender. Pour in coconut milk and lime juice (plus sweetener if using). Blend until smooth and creamy, scraping down sides as needed.
