Easy Chicken Marsala

Easy Chicken Marsala

This is an easy chicken marsala made all in one pan. It’s lightly coated with flour, sauteed, then placed in a delicious marsala sauce and served with your favorite pasta dish.

Ingredients

  • 2 large boneless chicken breasts sliced into medallions (or cutlets)
  • Seasoning Ingredients
  • 2 cups flour
  • 1 teaspoon granulated garlic powder
  • salt, pepper to taste, seasoning for flour
  • 1 teaspoon of each
  • 1 tablespoon or more dried or fresh parsley,
  • 1 large plastic bag
  • water or buttermilk (around 1 cup)
  • Dry Marsala wine 1/2
  • 1/2 cup chicken broth or more
  • 3 tablespoons olive oil or butter
  • 1 tablespoon minced garlic
  • Optional: 12 ounces of white sliced mushrooms (fresh) cleaned and washed
  • red pepper flakes
  • Cooking oil for frying: canola or vegetable oil
  • Side Dish Suggestions: pasta, or rice cooked according to package

Instructions

  1. First, slice the chicken in 1/4 thick slices and pound with a mallet.
  2. Dip in water or buttermilk added to a pie plate.
  3. Place all the seasoning ingredients except minced garlic in the plastic bag with flour and shake it.
  4. Add each piece of chicken to coat evenly.
  5. Heat oil to medium-low heat, add the fresh garlic, and saute each piece of chicken on each side until golden, around 3 minutes on each side.
  6. Place chicken in an ovenproof dish and keep warm.
  7. In a clean pan, heat the oil, then add the mushrooms,
  8. If you prefer crispy mushrooms, saute them in the oil for a few minutes until they begin to brown..
  9. Add the chicken broth and 1/2 cup of Marsala wine, and cook the wine down for around 4 to 6 minutes to reduce.
  10. Add the chicken pieces to the sauce and return to the casserole ovenproof dish.
  11. The chicken should be cooked when the internal temperature is at 165 degrees.
  12. Place in a preheated oven at 350 degrees for 15 minutes to ensure completion of cooking has occurred.
  13. Cook your favorite pasta, rice, or your favorite style of potatoes and serve as a side dish.
