Chicken Chow Mein, also known as Stir Fried Noodles with Chicken, can be a quick meal, not to be mistaken with the other Chicken Chow Mein takeout without noodles (see my recipe below). In the end of the video, I also compared Chow Mein and Lo Mein. Mein in Chinese means noodles (Mian). While you may use either noodles for this recipe, it is preferred to use Chow Mein noodles since they are harder and crispier. Enjoy!

Written recipe for Chicken Chow Mein:
Ingredients:
5 oz Chow Mein noodles (raw or cooked)
1 chicken breast or thighs, thinly sliced
2 green onions, sliced
2 cups shredded cabbage
1/2 red or regular onion, sliced
avocado or vegetable oil
Shaoxing cooking wine
light soy sauce
dark soy sauce (optional)
oyster sauce
salt
white pepper powder
starch
To marinate chicken:
Add salt, white pepper powder, light soy sauce, cooking wine and starch to chicken, mix well. Seal it with some oil.
For the sauce:
1 tbsp oyster sauce
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 tsp sesame oil
1/2 tbsp water
1. When the water is boiling, cook the noodles about 30 seconds (or according to the package instruction).
2. Take out the noodles into a bowl of ice water, and strain. Add a bit sesame oil.
3. Heat the wok to high heat till it smokes, add oil.
4. Stir fry the chicken for a few minutes till lightly brown. Set aside.
5. Add a bit more oil, stir fry garlic, onions and cabbage until the vegetables soften.
6. Add chicken back to the wok, and mix, followed by noodles. Stir fry.
7. Add sauce and mix well.
8. Add green onions and mix. Serve!
