Ingredients

  • 24 oz. honey gold potatoes
  • 2 garlic cloves crushed
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. Italian seasoning
  • 2 Tbsp. parmesan cheese

Instructions

  • Preheat oven to 425 degrees F.
  • Bring large pot of water to boil. Add potatoes and cook for 15 minutes, until fork tender.
  • Drain potatoes and let cool slightly.
  • Place potatoes on lined baking sheet.
  • Smash each potato gently with back of large spoon.
  • In small bowl, mix olive oil, crushed garlic, salt and Italian seasoning.
  • Drizzle oil mixture evenly over smashed potatoes.
  • Sprinkle with parmesan cheese.
  • Bake for 15 minutes, or until edges are golden and crisp.
  • Serve warm.
