Crispy Potato Flatbread (Schiacciata di Patate)

Schiacciata is an Italian flatbread most commonly found in Tuscany. Its name means “pressed down,” which refers to the method of pressing the dough during preparation. Schiacciata is thinner than focaccia and has a crisp exterior. It is commonly made with “00” flour, water, yeast, olive oil, and salt.

This Schiacciata is made with thin potato slices and topped with chopped rosemary and flaked sea salt. Other variations include thinly sliced zucchini or onions. The vegetables need to be sliced very thin to ensure the flatbread gets crispy, so using a mandolin is preferred. 

This famous flatbread can be enjoyed sliced into squares and served as a snack, alongside meals, or topped with cured meats. This flatbread is best enjoyed soon after baking, although you can reheat it in a 350 degree F. oven for about 10 minutes if you do have leftovers.

Ingredients

  • 5 Medium Potatoes
  • 2/3 Cup Grated Parmesan or Pecorino Cheese
  • 1 2/3 Cups Type 00 Flour (or All-purpose Flour)
  • 1 1/4 Cups+ Cold Water
  • Extra Virgin Olive Oil
  • Sea Salt Flakes
  • Fresh Chopped Rosemary

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a medium sized bowl, mix together the flour, cheese, water, and a drizzle of olive oil.
  3. Whisk together until smooth, the consistency should be like heavy cream so add a little extra water if needed.
  4. Slice the potatoes very thin with a mandolin then toss the potatoes with the batter until well coated.
  5. Line a large baking tray with parchment paper and spray or brush lightly with olive oil.
  6. Spread the potato mixture evenly across the tray.
  7. Drizzle more olive oil across the potato mixture, then sprinkle with flaked sea salt, and chopped rosemary.
  8. Bake on the lower shelf for 20 minutes, then turn the tray and move to the middle rack for another 20 minutes or until the flatbread is crispy and golden brown.
  9. Remove from the oven, cool slightly, then cut into squares and serve immediately.
