My kids are a big fan of sweet corn and creamy soups, so this cream corn instantly becomes one of their favorites. It is so comforting, filling and easy to make at home. It is perfect to serve hot during warm days and this recipe is something that both kids and adults enjoy. 

With just a few basic pantry ingredients like corn, butter, flour and milk , you can make this rich, creamy dish. You can also enhance the flavour by adding finely chopped garlic, onion, paprika, chill flakes or italian seasoning. And the best part is, it is a one pot dish and can be made in less than 30 minutes. 

This creamy corn is made by cooking sweet corn with butter, flour and milk until thick and rich. For extra richness, add shredded cheese like mozzarella, cheddar or parmesan for a cheesy note. Serve it hot with garlic bread, roast chicken or sourdough bread for a healthy meal.

Q. Can I use canned corn instead of fresh ones ? 

Yes, you can. But fresh corn has better texture and flavour compared to frozen. If using canned or frozen, thaw them before using it. 

Q. Why did my sauce look too thick ? 

Sauce may thicken as it cools. If it is thick, add a splash of milk or cream to adjust the consistency. 

Q. Can I add other vegetables ? 

Yes, you can add vegetables like onion, broccoli, bell pepper for extra flavour and taste. 

Q. Can I make this using an instant pot ? 

Yes, it can be made in an instant pot. Add corn and other ingredients to the pot, close and pressure cook for 2 to 3 minutes.

Ingredients

Fresh sweet corn is the star ingredient of this recipe. Use fresh corn for best taste and flavour. If fresh corn is not available, frozen or canned corn can be used. Just make sure to thaw it completely before cooking.

Butter adds richness and flavour to the cream base. If you want to make it lighter, use a mix of both oil and butter. 

All purpose flour is used to thicken the corn sauce and give its signature creamy texture. To make it gluten free, you can substitute it with rice flour. 

Milk – Use full fat milk for a rich and smooth texture. For dairy free options, use almond milk, oat milk or cashew milk. 

Seasoning – For seasoning, sugar, salt and pepper is added. You can also customize the spice flavours by adding chilli flakes, paprika or italian seasoning. 

Optional : Add finely chopped onion, garlic for extra flavour. A little bit of grated cheese can make the sauce even creamier. 

Step by Step Pictures

1)Add butter in a pan and melt it on low heat.

2)Add in fresh or frozen sweet corn.

3)Saute this for 6 to 8 minutes until the corn is slightly cooked.

4)Now add in plain flour. You can add some butter if your mixture is too dry.

5)Stir fry the corn with the flour for couple of minutes. The floury taste should be changed.

6)Now pour in milk and mix well. The milk will stay to thicken slightly.

7)Season the mixture with some salt.

8)Add in sugar to taste.

9)Add in some black pepper and mix well.

10)The mixture should get thick and creamy.

11)Now the mixture is creamy. This will continue to thicken as it cools.

12)Serve.

Expert Tips

  • For best flavour and texture, use fresh corn. 
  • Use good quality butter and full fat milk to make the dish rich and creamier. 
  • Cook the corn slowly over low heat, so it thickens without forming any lumps. 
  • If you want to make chunky and creamy soup, blend half of the corn using an immersion blender. 
  • To make it even more flavourful, add grated cheese like cheddar, parmesan, or mozzarella or sprinkle with seasonings. 
  • Add a tablespoon of full fat cream for extra richness. 
  • For finishing touch, add fresh herbs like thyme or parsley.

Storage & Serving

Once the cream corn is completely cooled, store them in an airtight container and it will stay good in the refrigerator for 3 days. Warm the creamy corn using the stovetop over low heat or in the microwave oven. While reheating add a splash of milk and a spoon of butter to loosen it.

Ingredients  

  • 2 cob Sweet corn remove kernels
  • 3 tablespoon Butter
  • 2 tablespoon All Purpose Flour
  • 2 cups Full Fat Milk
  • 1 teaspoon Salt to taste
  • 1 to 2 tablespoon Sugar
  • ½ teaspoon Black Pepper Powder

Instructions 

  • Take your fresh corn and remove the kernels from it, set aside.

  • Now heat butter in a pan, add corn and saute on low heat for 8 mins till it gets tender and cooked. Add in flour and saute for 2 mins.

  • Pour in milk and mix well. Simmer it for 5 to 8 mins till it thickens. Now add in salt, pepper and sugar and mix well. Serve.
