Ingredients

  • 1 15 oz. can garbanzo beans rinsed and drained
  • 1/4 cup tahini
  • 1 clove fresh garlic
  • 1 lemon juiced and zested
  • 1/2 cup fresh parsley
  • 1/4 –1/2 cup olive oil
  • 1/2 tsp. onion powder
  • Salt and pepper to taste

Instructions

  • Add all ingredients to food processor.
  • Blend on low speed for 2 minutes. Increase to high and continue blending until smooth and creamy.
  • Use as sandwich spread, stirred into cooked quinoa or as substitute for mayo in potato salad.
