Traditionally, cowboy cookies are loaded with coconut, nuts, oats, and chocolate chips and go by many names, IE, Laura Bush cookies and the Everything Cookie, depending on where you’re from.

This version keeps all those classic, hearty mix-ins but starts with a chocolate cake mix, making them extra rich, chocolatey, and unbelievably easy to make.

Chocolate Cowboy Cake Mix Cookies

Cookies packed with nuts, chips, coconut, and all made easy starting with a chocolate cake mix! Cowboy cookies are outrageously delicious!

Ingredients

  • 1 box 15,25 ounce chocolate super moist version Cake Mix
  • 1/2 cup packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 tablespoons water
  • 1 1/2 teaspoons ground cinnamon
  • 1 egg
  • 2 cups quick-cooking or old-fashioned oats
  • 1 cup semi-sweet (milk chocolate, peanut butter, or another flavored chocolate chip or chocolate chunks)
  • 1/2 cup coconut
  • 1/2 cup coarsely chopped pecans (or sunflower seeds for nut allergies). optional

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Cream the butter, shortening, and brown sugar in a mixing bowl until evenly blended.
  3. Add the water, cinnamon, cake mix, and egg mix until blended, then fold in the nuts, chips, and coconut.
  4. Drop cookie dough using a cookie scoop onto the baking sheet.
  5. Bake at 350 degrees until the edges are browned and the center puffs up on the cookies. Around 10 to 12 minutes.
  6. Cool slightly before removing to a wire rack.
