Tomato season never tasted so good. These buttery caprese tarts are a fresh, easy way to impress—crispy puff pastry loaded with mozzarella, ripe tomato slices and a hit of basil. They’re simple to make but taste straight out of a bistro.

Ingredients
- 1 puff pastry sheet thawed and cut into 4 squares
- 10 oz. cherry tomatoes
- 1/3 cup pesto
- 4 oz. burrata
- 1 cup mozzarella cheese shredded
- 4 garlic cloves sliced thin
- 1/4 cup fresh basil chiffonade cut
- 3 sprigs of fresh thyme
- Olive oil
- Chili flakes to taste
- Salt to taste
Instructions

Preheat oven to 425 degrees F.

To medium bowl, add tomatoes, basil, pinch of chili flakes, garlic, thyme leaves, pinch of salt and drizzle of olive oil.

Mix well and set aside.

Add pesto to each puff pastry square leaving room around perimeter. Top with mozzarella cheese.

Add tomato mixture to each pastry. Pinch and fold outside of dough inwards to seal edges.

Bake for 15-20 minutes until golden brown. Immediately top with burrata cheese and enjoy!
