Ingredients

  • 1 puff pastry sheet thawed and cut into 4 squares
  • 10 oz. cherry tomatoes
  • 1/3 cup pesto
  • 4 oz. burrata
  • 1 cup mozzarella cheese shredded
  • 4 garlic cloves sliced thin
  • 1/4 cup fresh basil chiffonade cut
  • 3 sprigs of fresh thyme
  • Olive oil
  • Chili flakes to taste
  • Salt to taste

Instructions

  • Preheat oven to 425 degrees F.
  • To medium bowl, add tomatoes, basil, pinch of chili flakes, garlic, thyme leaves, pinch of salt and drizzle of olive oil.
  • Mix well and set aside.
  • Add pesto to each puff pastry square leaving room around perimeter. Top with mozzarella cheese.
  • Add tomato mixture to each pastry. Pinch and fold outside of dough inwards to seal edges.
  • Bake for 15-20 minutes until golden brown. Immediately top with burrata cheese and enjoy!
