I’ve been passionate about Mexican food my entire adult life, long before we could easily find the ingredients needed to make even the simplest dishes. Thankfully, it’s now much easier to get everything you need to cook authentic Mexican meals at home. I’ve rounded up a few of my favourite recipes to share.

I love oven-baked tacos. The process is more hands-off than making them in a pan. Ideal for feeding a crowd.

This classic South American cake is one of my all-time favourites. Traditionally, I have used 3 types of milk to soak, but now I add six kinds, including caramel. It’s so delicious, I also made a coffee version in a single layer using dalgona cream on top.

An easy Mexican menu to feed a crowd
If I were looking to create a low-fuss, make-ahead Mexican menu where everyone could DIY their food, this is what I would make. Perfect for a casual celebration or gathering.
To Sart – Ceviche and corn chips, and a possible Mexican corn esquites salad as a second vegetarian option. A third dip/starter could be pomegranate guacamole.
To drink – I would serve palomas, of course.
Main – I would make the Pulled pork carnitas tacos as per above.
Dessert – tres leches cake made in a single layer and served in squares, alternatively hte coffee tres leches with dalgona cream.
