Ingredients

  • 4 cups old-fashioned oats
  • 1 cup cashews chopped
  • 1 cup unsweetened coconut flakes
  • 1 Tbsp. ground cinnamon
  • 1 tsp. kosher salt
  • 1/2 cup olive oil
  • 1/2 cup maple syrup
  • 1 cup dried fruit such as cherries, chopped apricots, raisins or a mix, optional

Instructions

  • Preheat the oven to 300 degrees F.
  • In large bowl, stir together oats, cashews, coconut, cinnamon and salt.
  • In glass measuring cup, combine oil and sweetener. Warm in microwave for 10 to 15 seconds, until pourable.
  • Add liquid mixture to oat mixture and stir to combine.
  • Divide mixture between two baking sheets, spreading it into single even layer.
  • Bake for 30 minutes, rotating pans halfway through, until granola is golden and crisp.
  • Cool on pans to room temperature, then stir in dried fruit, if using. Transfer to airtight container for storage.
