Ingredients

  • 3 ripe bananas
  • 3/4 cup coconut oil melted
  • 1/2 cup honey
  • 2 eggs
  • 1-1/2 cup gluten-free flour
  • 1 tsp. baking soda
  • 1 /2 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 cup walnuts chopped
  • 1/2 cup raisins

Instructions

  • Preheat your oven to 350 degrees F. Lightly grease brownie or mini muffin pan with oil.
  • In large bowl, mash bananas until smooth and free of lumps.
  • Stir in melted coconut oil and honey, mixing until well combined.
  • Add eggs, vanilla extract and mix thoroughly.
  • Add in salt and baking soda, then add flour. Stir until smooth batter forms.
  • Gently fold in chopped walnuts and raisins.
  • Spoon batter evenly into prepared pan. If desired, place small slice of banana on top of each bite.
  • Bake for about 20 minutes, or until toothpick inserted into center comes out clean.
  • Allow to cool slightly before removing from pan.
