Ingredients

  • 1-1/3 cup rolled oats
  • 1 Tbsp. chia seeds
  • 2 tsp. pumpkin spice
  • 1 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup almond milk
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 tsp. vanilla extract
  • 1/4 cup chopped pecans
  • 1 Tbsp. pumpkin seeds

Instructions

  • Preheat oven to 350 degrees F. Grease loaf pan with coconut oil. Set aside.
  • In large bowl, add oats, chia seeds, spices, baking powder and salt.
  • In medium bowl, whisk together milk, pumpkin puree, maple syrup and vanilla extract.
  • Add liquid to dry ingredients and mix to combine.
  • Pour oatmeal into loaf pan. Sprinkle pecans and pumpkin seeds on top of oats. Bake for 15 minutes.
  • Remove oats from oven and serve immediately.
