These baked chicken bites are a total win—tender and juicy, and packed with flavor in every bite. They’re incredibly easy to make, too—just toss bite-sized pieces of chicken in a simple seasoning mix, pop them in the oven, and let the magic happen. No breading or frying needed, and they still come out golden and full of savory goodness. Dip them, sauce them, or eat them straight off the pan—they’re that good.

How to Make Oven-Baked Chicken Bites
This recipe is effortless to make with only a few simple pantry ingredients. Cut boneless chicken breasts into 1-inch cubes. Place chicken pieces in a large bowl. Add chicken base, olive oil, paprika, onion powder, garlic & herb seasoning, cayenne pepper, salt, and black pepper, and toss to coat. Spread the chicken chunks into a 9×13-inch baking dish and bake in a preheated oven until the internal temperature reaches 165ªF. Garnish with fresh parsley.
Helpful Tips & Frequently Asked Questions
- I use boneless skinless chicken breasts. You can substitute chicken tenderloins or chicken thighs.
- Use an instant-read thermometer to check for an internal temperature of 165ºF.
- I use Better Than Bouillon for the chicken base. You can substitute granulated chicken bouillon.
- My favorite garlic and herb seasoning is either Kinder’s or McCormick’s.
- For extra flavor, you can finish them off with a quick broil, sprinkling parmesan cheese on top, or toss them in your favorite sauce right after baking.
- For a crunchy coating, roll the chicken in crushed crackers, panko, or cornflakes before baking.
Storage Tips
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- To keep them from getting soggy, let them cool completely before sealing.
- For reheating, skip the microwave if you want to keep that nice texture—pop them in the oven or air fryer at 375ºF for a few minutes until warmed through and crispy again.
- Can I freeze Chicken Bites? Yes, arrange the cooled bites in a single layer on a baking sheet and freeze until solid, then transfer to a freezer bag. They’ll keep for up to 2 months and reheat best straight from the freezer in the oven or air fryer.
