Nothing says spring quite like a bundle of fresh asparagus, and this simple salad is one of my favorite ways to celebrate the season. Whether I’m browsing outdoor markets here in Florida or thinking back to the vibrant spring produce we enjoy at our farmhouse in Umbria, tender asparagus always finds its way onto my table this time of year.
In this dish, lightly blanched asparagus is paired with a generous handful of fresh herbs, fragrant dill and parsley, that bring a bright, garden-fresh flavor to every bite. The addition of crumbled feta cheese adds a creamy, salty contrast that balances the crisp sweetness of the asparagus beautifully. A simple dressing of good olive oil and a splash of lemon juice ties everything together, creating a salad that is both refreshing and satisfying.
This asparagus salad is as versatile as it is delicious. It makes a lovely light lunch on its own, but also pairs wonderfully with grilled meats, seafood, or poultry. You can easily adapt it to your taste by adding sliced cucumbers, cherry tomatoes, or even a handful of toasted nuts for extra texture.
Best of all, this salad comes together in minutes, making it perfect for both casual meals and elegant entertaining. It’s the kind of dish that lets a few fresh, quality ingredients shine, just the way I like to cook.
