Ingredients
- 2 cups sweet potatoes cooked
- 3/4 cup brown coconut sugar
- 1/4 cup cocoa powder
- 1 Tbsp. baking powder
- 1/2 cup olive oil
- 1-1/4 cup almond flour
- 1/3 cup mini chocolate chips
Instructions

Preheat the oven to 350 degrees F and line cookie sheet with parchment paper.

In medium bowl, mash sweet potatoes. Add sugar, cocoa powder, baking powder and oil.

Using hand mixer, mix all ingredients together until well combined.

Add almond flour and continue mixing until soft dough forms. Fold in chocolate chips.

Using medium cookie scoop, scoop dough on cookie sheet.

Using back of spoon, flatten cookies and add extra chocolate chips on top.

Bake for 10-12 minutes.

Place cookies in fridge and allow them to cool completely before serving.
