Ingredients

  • 6-7 (about 4 lbs.) bone-in, skin-on chicken thighs
  • 2 russet potatoes cut into chunks
  • 1/2 medium onion chopped
  • 1/4 cup lemon juice
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme

Instructions

  • Preheat oven to 425 degrees F. In 9×13-inch glass baking pan, combine chicken thighs, potatoes and onions.
  • In small prep bowl, whisk together lemon juice, olive oil and spices. Pour over chicken and veggies. Let sit on counter to marinate 30 minutes.
  • Bake 50 minutes to 1 hour until chicken is cooked through and skin is crispy.
