You know how much I love a classic Caprese salad. Juicy tomatoes, creamy mozzarella, and fragrant basil are already a match made in Italian heaven. But sometimes I want a salad with a little more sostanza—something fresh and colorful that keeps us satisfied.

That’s where the chickpeas and cannellini beans come in. The chickpeas have a pleasantly firm bite, while the cannellini beans are soft and creamy. Together, they turn those familiar Caprese flavors into a hearty salad that can hold its own as a light lunch or accompany just about anything we’re serving for dinner.

This is one of those dependable recipes you can make when you need a quick lunch, a colorful potluck dish, or a fresh side to go with grilled chicken, seafood, steak, or sandwiches.

Try to give the salad five minutes to rest before you grab your fork. I know—it’s difficult! But that short wait lets the beans absorb some of the vinaigrette and allows all those delicious flavors to become better acquainted.

Make it ahead if you like, serve it with warm crusty bread, and don’t forget to spoon up every last drop of that balsamic dressing. Around here, letting good dressing go to waste would be a terrible shame. Buon appetito, amici!
