Take your grilled steak dinner over the top by grilling bread right next to it. Crusty, herby, buttery with gorgeous grill marks is worth every bite.

What’s steak and potatoes without a side of crusty French bread? Honestly, as excited as I get about a perfectly grilled steak, it’s really the bread that makes the meal. Slather it with herbed butter, and you have an Instagram-worthy dinner.
Besides, why toast bread in the oven when the grill is already hot? We’re all about making life easier, right?

Which Bread to Use
You’ll want a chewy, sturdy bread that can hold it together while hanging out on the grill. Sourdough has a pleasant tang and good chew that goes great with grilling. For an over-the-top panini, ciabatta and focaccia are good choices.
And then, the classic baguette, Italian bread, and French bread are perfect for bruschetta and crostini. For a slightly sweeter, buttery twist, definitely try brioche on the grill. And, of course, any of these are great as is on their own.
How to Grill Bread

Mix the herbs with softened butter, slice the bread, slather, and grill.
Recipe Tips and Twists
- Make the slices thick so they can hold together on the grill.
- Some kind of fat will keep the bread from sticking and toast it evenly. If you don’t want to use butter, olive oil will work fine.
- Top grilled bread with pesto and tomatoes for one of many bruschetta twists.
- Is the butter too cold? Cut it into small cubes, and it should warm up in about 15 minutes. Or grate it into a warm bowl for even faster softening.

Make-Ahead and Leftover Makeovers
Whip up the herbed butter the day before, slather the sliced bread, and keep it all in an airtight zip-lock bag until it’s time.
Leftovers make a great savory bread pudding or dressing. I also keep them in the fridge sealed in a zip-lock bag, pull out as many as we need, and toast them for dinner the next day. They’ll stay good for three days and crisp back up in a toaster oven or air fryer.
What Goes With Grilled Bread
My first choice is a spicy New York steak or flank steak and mashed potatoes, but we also love it for bruschetta. And if you’re planning a New Year’s or Game Day party with appetizer platters, these guys pair perfectly with an endless list of dips and sauces.
