Recipe:
2 lbs boneless chicken thighs (salt brine overnight)
Wet batter:
1 cup flour
1/3 cup corn starch
1/4 cup egg whites
8-12 oz sparkling water
Dry batter:
3 cups flour
1 cup corn starch
1 tsp baking powder
1 tsp Chili
1 tsp Garlic powder
1 tsp Paprika
1/2 tsp Pepper
Salt comes from dry brine and after frying
Sauce:
1 cup ketchup
1/4 cup Worcestershire sauce
2 tbsp apple cider vinegar
2 tbsp chipotle hot sauce
1/4 cup honey
3 tbsp butter
To assemble:
Brioche bun sliders (as many as the chicken thighs)
Pickles
Spicy mayo:
1 cup mayo
1/4 cup hot sauce
1 tsp paprika
1/2 tsp chili powder
2 tbsp honey
Salt to taste
