Ingredients
- Baking Mix Coffee Cake
- Streusel Filling
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1/2 cup chopped pecans (optional)
- 2 teaspoons ground cinnamon
- 12 tablespoons butter, melted
- 3 cups baking mix (any brand)
- Baking Mix Batter
- 3 cups baking mix
- 1 cup whole milk
- 1/2 cup sour cream
- 1/4 cup granulated sugar
- 1 tablespoon vanilla extract
- 2 large eggs
- 2 teaspoons cinnamon
- Optional Glaze
- 2 cups of powdered sugar
- water to make a thin glaze (or milk)
Instructions
- Directions
- Preheat the oven to 375 degrees F. Grease or line a 9 x 13 baking dish with parchment paper for easy removal.
- Note: this can be baked in a bundt pan, also adjust the baking time between 45 minutes and 55 minutes. Grease and flour the pan.
- In a medium bowl, mix the streusel dry ingredients evenly.
- Pour the melted butter over the dry mixture and blend with a fork until it looks like coarse crumbs. Set this aside.
- In a clean bowl, mix the baking mix with milk, sour cream, sugar, eggs, and vanilla just until combined. Do not overmix.
- Pour half the batter into the prepared pan, add half the streusel mix, then the batter, then top with the remaining streusel.
- Bake at 375 degrees until the mix comes out clean using a toothpick, around 25 to 35 minutes.
- Cool completely.
- Garnish with a drizzle of icing or dust with powdered sugar.
