Lemon Dijon Marinade

This Smoky Lemon Chicken Marinade is one of those recipes that surprises you with just how much flavor it delivers for something so easy to throw together. Fresh lemon juice, olive oil, dijon mustard, garlic, soy sauce, and a hint of liquid smoke. The chicken turns out incredibly juicy and tender, and the flavor really soaks all the way through. We had it for lunch and practically fought over the leftovers—next time I’m definitely doubling the recipe because it disappears fast. It’s just that good.

How to Make Smoky Lemon Chicken Marinade

This recipe is effortless to make with only a few simple ingredients. Start by placing your chicken breasts in a large zip-top bag or container with a tight-fitting lid.

In a small bowl, whisk together all of the marinade ingredients – olive oil, soy sauce, fresh lemon juice, mustard, liquid smoke, garlic powder, onion powder, black pepper, and sea salt

Pour the lemon marinade over the chicken, seal the bag, and place it in the fridge. Let the chicken marinate in the refrigerator for 2 to 3 hours so the flavor really soaks in. When you’re ready to cook, grill over medium high heat or bake in a baking dish until the internal temperature reaches 165 degrees F. Always use a meat thermometer to make sure it’s perfectly cooked and still juicy.

Helpful Tips & Frequently Asked Questions

  • Marinate for at least 2 hours for best flavor, but avoid going much longer than 6–8 hours since the fresh lemon juice can start to affect the texture.
  • This lemon garlic marinade works with different cuts of chicken, including chicken thighs, drumsticks, bone-in chicken, and even wings. Adjust cook times as needed.
  • You can freeze raw marinated chicken in a freezer-safe bag. Thaw overnight in the refrigerator before cooking.
  • For extra flavor, add a little lemon zest or a pinch of red pepper flakes to the marinade ingredients.
  • If grilling, let excess marinade drip off before placing chicken on the grill to prevent flare-ups.

Storage Tips

  • Leftovers store well in an airtight container in the fridge and are great sliced over salads, rice bowls, or tucked into wraps.
