Roasting is one of my favorite ways to prepare vegetables because it brings out their natural sweetness while creating irresistible crispy edges. Cauliflower, in particular, transforms beautifully in a hot oven. What starts out as a mild, slightly earthy vegetable becomes nutty, tender, and deeply flavorful once roasted.

In this simple recipe, cauliflower florets are tossed with olive oil, plenty of garlic, and a generous shower of Parmesan cheese before roasting until golden brown. The garlic perfumes the cauliflower as it cooks, while the Parmesan melts and forms savory, lightly crisp bits that cling to the florets. The result is a dish that is both rustic and incredibly satisfying.

This roasted cauliflower makes a wonderful side dish for almost any meal, pairing especially well with roasted chicken, grilled meats, or simple pasta dishes. It is also delicious served on its own as a warm appetizer or even as a healthy snack straight from the pan.

Like many of my favorite vegetable dishes, this recipe is very adaptable. You could add a pinch of red pepper flakes for a little heat, or finish the dish with a squeeze of fresh lemon juice for brightness. However you serve it, this Garlic Parmesan Roasted Cauliflower is one of those simple recipes that proves vegetables can be every bit as crave-worthy as the main course.

Ingredients

  • 1 Head Cauliflower, Cut Into Bite Sized Pieces
  • 4 Tablespoons Olive Oil
  • 2 Teaspoons Paprika (Smoked or Regular)
  • Salt & Pepper To Taste
  • 4 Garlic Cloves, Minced
  • 1/2 Cup Freshly Grated Parmesan Cheese
  • 1/4 Cup Finely Chopped Fresh Parsley

Instructions

  1. Preheat oven to 425 Degrees F.
  2. Line a large baking sheet with parchment paper.
  3. Place the cut cauliflower in a bowl with the olive oil, salt, pepper, and paprika and toss to coat well.
  4. Arrange the cauliflower on the prepared baking sheet and roast for 25 minutes, turning the florets over halfway.
  5. Sprinkle the cauliflower with the grated cheese and garlic, and return to the oven for 5 to 10 minutes until brown.
  6. Dump the cauliflower onto a platter and sprinkle with the parsley and serve.
