When I was growing up, my mom had her own little delicatessen in Utica, New York, where she made the best Homemade Italian Sausage Patties.

There’s something incredibly special about recipes that have stood the test of time — especially when they come from Mom’s kitchen

This baked sausage patty recipe has been in our family for over 100 years, passed down through generations, and made in every shape imaginable.

From classic round Italian patties to hearty sausage logs and even hand-formed rustic shapes, this recipe has always been as versatile as it is delicious.

Unlike store-bought sausage, this homemade version is full of rich, savory flavor and simple ingredients you can trust.

Baking makes it easy, less messy than stovetop frying, and perfect for making large batches however, you can also fry or air fry them.

Whether you use it shaped into patties, formed into logs, or left loose for crumbles, this old-fashioned sausage recipe is pure comfort food with history in every bite.

We sometimes even add potatoes to this sausage patty meal, and leftover patties are great, adding a Traditional Italian Sunday Tomato Sauce.

Mom also had a hand-cranked manual machine to make sausage links, patties, skewers, and even keep some loose for her homemade sausage rolls!

Grilled. Baked, Air Fry or Pan Fry

  • Grilled: Heat the grill on medium heat, place the patties on oil-sprayed grates, and cook for around 5 minutes on each side or until they have a nice char on the outside
  • Baked: Line a casserole or deep baking sheet with oil-sprayed parchment paper and bake at 400 degrees for around 35 minutes, flipping once
  • Air Fry: Set the air fryer to 375 degrees and oil spray the tray or basket (you can also use foil sprayed with cooking spray). Air fry for 16 minutes
  • Pan Fry: Just add a few tablespoons of oil in a cast-iron skillet and fry until crispy on the outside, or cook your sausage patties. Pork should always be cooked all the way through

Tips for Perfect Baked Sausage Patties

  • Don’t overmix. Mix just until combined to keep the sausage tender.
  • Use parchment paper
    Prevents sticking and makes cleanup simple.
  • Shape evenly. Uniform thickness ensures even baking.
  • Make a test patty first. Cook a small piece to check the seasoning before shaping the full batch.
  • Freeze for later. Freeze raw patties between layers of parchment. Bake straight from frozen, adding a few extra minutes.
  • Drain properly. If baking on a rack, excess grease drips away for a lighter texture.

Mom’s Italian Sausage Patties

This baked sausage patty recipe has been in our family for over 100 years, passed down through generations, and made in every shape imaginable.

Ingredients

  • 2 to 3 lbs. of ground pork mixed with pork fat (I usually use a pork shoulder 70/30 ratio or butt ground)
  • 1 tablespoon fennel seed
  • 2 tablespoons paprika
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon or more of salt and pepper
  • 2 or 3 tablespoons red or white wine
  • 3 tablespoons grated cheese
  • 2 tablespoons Italian seasoned bread crumbs
  • parsley, fresh chopped, around 2 teaspoons
  • For sweet sausage, use the above recipe and omit the cayenne pepper
  • For hot sausage, add 1/2 teaspoon of ground cayenne pepper per pound.

Instructions

  1. Mix the ground pork in a bowl with all ingredients, shape into whatever you want, loaves, patties.
  2. Fry on medium heat, bake, or grill.
  3. You can also bake at a 400-degree oven until browned, placing them on parchment paper or a greased pan for around 30 minutes or until browned and start to look crispy on the outside. Add potatoes, onions, peppers, and whatever else you like for a one-pan meal.
  4. If making skewers, just use prepared kebab sticks and thread the meat onto them.
  5. Grill until browned. If you would like them baked or fried, shape them into little loaves, cook them, then thread them on skewers.
  6. Note: You can also Air Fry the sausage.
