If you love our Korean ground beef, you’re going to be obsessed with these crispy Korean beef pockets. It is my FAVORITE way to eat our Korean ground beef now. These pockets take that same sweet-and-savory flavor and wrap it up in tortillas with melty cheese, then bake until crisp and golden.
They’re easy enough for a busy weeknight, fun for kids, and also perfect for a hearty appetizer or gameday food.
I have a 5 minute limit on my Instagram so to say that I’m out of touch with things is a total understatement. But! My sister texted me one day that she’d sent more reels than dollars in her pocket so I’d better get on and watch them all.
As soon as I opened it up, I saw a crunchy tortilla pocket and knew instantly we should make a Korean beef version to use our viral beef recipe. And I cannot even tell you how unbelievable they are! Like, I would literally make a food truck of these suckers!!
I was going to wait until the Super Bowl next year to post these little beauties, but this CANNOT wait! You all need to love these as much as I do RIGHT NOW!!

I had high hopes when I decided to test this recipe, but I had NO IDEA that I wouldn’t be able to keep my hands out of these crispy Korean beef tortillas. We are lucky I got some good photos of them because I seriously couldn’t stop. Here are all the reasons you’re going to love them too:

Ingredients You’ll Need

- Ground Beef: The hearty base of this recipe that is juicy, flavorful, and perfect for soaking up the sweet and savory sauce.

How to Make Korean Beef Pockets
- Brown the Beef: Heat a cast iron skillet over medium-high heat and add a little oil. Add the ground beef and garlic and cook until brown, breaking it up as it cooks.
- Make the Sauce: Add all the ingredients for the sauce to a mixing bowl and whisk to combine. Add the sauce to the meat and let it simmer until thickened slightly.
- Prep: Preheat oven to 350℉ and spray a pie dish with cooking spray.
- Soften the Tortillas: Quickly dip the tortillas in water and then cut them in half.
- Assemble: Add a spoonful of the saucy beef to the center of each tortilla half, add a little cheese and then fold the tortilla into a triangle by folding each side of the tortilla over the mound of meat. Repeat with each tortilla half.
- Bake: Place each pocket into the dish seam side down. Sprinkle everything with a little more cheese and bake for 20-25 minutes.
- Serve: Drizzle some sweet chili sauce over the top and sprinkle with toasted sesame seeds and green onions and serve!
Tips for Extra Crispy Beef Pockets
Don’t skip that dip into water! It helps the tortillas not burn while at the same time promoting crispiness. The water evaporates as they bake leaving perfect crunch behind.
How to Make in the Air Fryer
These will bake very well in an air fryer. You will probably need to air fry them in batches depending on the size of your air fryer. Prepare the pockets as described in the recipe and place in the air fryer preheated to 350℉ for 3-5 minutes.

Variations and Substitutions
If you want to lighten up this recipe a little, swap the ground beef for lean ground turkey or chicken.
You all know I’m a baby when it comes to spiciness, but if you want to dial up the heat, add a little gochujang or sriracha to the sauce for the ground beef. You can also drizzle a little sriracha on the top of the beef pockets before serving.
What to Serve with Korean Beef Pockets
When I make these baked beef pockets for our main dish at dinner, I like to make simple, fresh sides like steamed broccoli or edamame, sauteed snap peas, or grilled asparagus. If I’m feeling like I want something cool, our yummy Asian cucumber salad is so delicious! Of course, there’s always steamed white rice!
Storing and Reheating
Leftover Korean beef tortilla pockets should be stored in an airtight container in the refrigerator. They will keep for 2-3 days but keep in mind that the tortillas will get more and more soggy the longer they sit.
I recommend reheating them in the oven or the air fryer to restore the crispy texture. You can also flash freeze the pockets and then store in a freezer safe container. They will keep for up to a month. Then thaw in the fridge and reheat as mentioned.

These crunchy Korean beef pockets are one of those dinners that feels fun but is still totally doable on a busy night.
