Ingredients

Cookies

  • 1 cup brown rice flour
  • 1/2 cup bone broth unsalted
  • 3 Tbsp. almond butter natural
  • 2 Tbsp. arrowroot starch
  • 1 Tbsp. olive oil
  • 1-2 Tbsp. water
  • 2 tsp. beet powder
  • 1/4 tsp. xanthan gum

Filling

  • 1/4 cup Greek yogurt
  • 1 1/2 Tbsp. arrowroot starch
  • 1/2 Tbsp. honey

Instructions

Filling

  • Combine all ingredients into small bowl until smooth.
  • Refrigerate until needed.

Cookies

  • Preheat oven to 325 degrees F. Line cookie sheet with parchment paper or non-stick baking mat.
  • In medium bowl, combine all ingredients. Mix well.
  • Wrap dough in plastic wrap and rest for 5 minutes.
  • Roll dough out into 1/4-in. thickness.
  • Using cookie cutter, cut shapes and place on lined cookie sheet.
  • Bake for 25-30 minutes or until they look dry. For softer treats, bake for less time.
  • Transfer onto wire rack and let cool completely.
  • Once cooled, make sandwiches with yogurt filling.
