Situated at the foot of Fairmont Singapore lies Prego, a 133-seater Italian restaurant dating back to 1986, cementing its status as one of the pioneer Italian spots in Singapore. It’s also located in the heart of City Hall and close to 2 MRT Stations, making it within reach for locals and tourists.

During the day, you step into a bright and inviting space with floor-to-ceiling windows that let in copious amounts of sunlight. As the sun sets, the restaurant transforms into a warm and elegant haven with its contemporary colour palette and tasteful decor.

Helmed by Italian Chef David Bizzarri, Prego prides itself in serving a lineup of handcrafted pastas and in-house made pizzas, wood-fired to perfection. There’s antipasti, succulent grilled meats, and so much more. 

With its Ospitalità Italiana Certification, guests can expect genuine Italian culinary standards and hospitality. There’s also the Servizio al Carrello, a tableside trolley service that’s unique to Prego, and aligned with Fairmont’s signature brand ritual.

What I tried at Prego

Chef Davide’s seasonal menu spotlights fresh, dynamic Italian flavours with meticulously crafted dishes that highlight the season. The à la carte selection uses specific ingredients that are sourced from their in-house Aquaponics Farm to echo the season. 

Let me give you a little preview of what to expect.

Prego - vitello tonnato dish

The Vitello Tonnato (S$34) is the perfect light starter to kick off your Italian feast. It features thinly-sliced roasted milk-fed veal loin, semi-dried tomatoes, capers textures, rucola salad and a “tonnata” sauce espuma, made with anchovies and canned tuna for an umami burst of flavour.

Prego - pizza

I’ve always loved light, simple pizzas like the classic margherita. Well, let’s just say the Capri (S$40++) is an elevated upgrade that I didn’t know existed. It’s loaded with fresh heirloom tomatoes, Leccino olives, Italian oregano, and buffalo mozzarella, then artfully drizzled with Tuscan kale pesto.

The kale’s earthiness in the pesto was such a refreshing twist to the usual basil, which paired flawlessly with the vibrant, tangy tomatoes and savoury olives. When eaten together with the slightly chewy and fluffy crust, every bite of the pizza was simply heavenly. 

Prego - salmone dish

The Salmone (S$52) was probably one of the best fish dishes I’ve had in a long time. The ocean trout was cooked to sous vide perfection — velvety smooth and fluffy like a cloud. 

It was elegantly lined with a scallop and Tuscan kale pesto mousse, served with spinach, porcini, and prosecco wine sauce. The clever addition of crispy kale on top of the trout added a bonus charred flavour and crunchy texture that was an unexpected delight.

Prego - mamma silva dish

The Conchiglie alla “Mamma Silva” (S$38++) is a recipe from Chef Davide’s mother. Hand-kneaded shell pasta is served with unctuous Wagyu beef ragu, mascarpone cheese, forest mushrooms, and crowned with pecorino cheese shavings. The dish was incredibly hearty, capturing the soulful warmth of a home-cooked meal shared around a traditional Italian family table.

Prego - porchetta dish

Prepare for some addictive crunchiness as you cut into the Pancette di Maiale in Porchetta (S$56++). The pieces of caramelised plum inject a light sweetness that cuts through the richness of the slow-roasted pork belly. Pair it with the aromatic smashed potatoes, along with the rosemary jus and dill cream. Enjoy every crispy, divine moment.

Prego - gnocchi

Chef Davide might have just made me accept blue cheese with open arms. The Gnocchetti di Patate, Gorgonzola e Radicchio (S$36++) was a combination of potato gnocchi slathered in gorgonzola cream sauce, sauteed chioggia chicory, and topped with burnt onion powder and fried sage.

Prego - other dishes

There’s also other lip-smacking mains for you to discover. Beef lovers should get the Guancia (S$52++) that pairs a lovely red wine braised beef cheek with creamy mash. The Polpo e Fagioli (S$38++) is a charred Fremantle octopus leg dish that shines. 

For melt-in-the-mouth beef, savour the Casarecce allo Costine e tartufo (S$40++) which fuses 24 hour-braised short ribs ragout with casarecce pasta, mascarpone cheese and seasonal Italian truffle. 

The Pollo alla Diavola (S$48++ for half) is a vibrant, spiced chicken dish that showcases chilli marinated flame-grilled corn-fed spring chicken and pommery mustard sauce.

Prego - desserts

For those looking for interesting and unique desserts other than the classic tiramisu, then let me introduce these 2 fresh additions on the menu.

Prego - tomato sensation

I mean, would you look at how stunning and detailed the Tomato Sensation (S$20++) is? My dining partner and I spent a good 2 minutes swooning at the intricacy of the ‘tomato garden’ and couldn’t bear to eat it.

The dessert lets you experience 3 different textures and flavours in a single plate. It consists of a vanilla panna cotta, a tart strawberry confit gelee, and a zingy citrus basil sorbet. It all sits on a bed of cookie crumble and served with strawberry sauce. Yum!

Prego - banoffee puff

The Banoffee Puff (S$20++) is a combination of banana caramel and coffee muscovado crumble, paired with a roasted white chocolate gelato. Another must-try.

It’s a rare feat for a restaurant to hit the mark on every single dish, but Chef Davide managed to blow me away with a flawless streak of incredible creations. Each ingredient played a clear role, and every element worked in harmony, making most of the dishes nothing short of being a knockout.. 

I’ve long heard of — and walked past — Prego more times than I can count, and I can’t help but feel a sense of guilt for only dining there now. No wonder the restaurant has stood the test of time and continues to thrive to this day.

I’m sure from now on, Prego will be one of my top recommendations for Italian food.
