Ingredients

Cake

  • 1-1/2 cups gluten-free oat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup coconut cream
  • 1/2 cup organic sugar
  • 1/4 cup coconut oil
  • 1 Tbsp. psyllium husks
  • 2 Tbsp. water

Oat topping

  • 1 cup gluten-free rolled oats
  • 2 Tbsp. coconut oil
  • 1 Tbsp. organic sugar
  • 1/2 tsp. vanilla

Topping

  • 1 cup sliced plums

Instructions

  • Preheat oven to 350 degrees F. In medium bowl, mix together dry ingredients.
  • Stir wet ingredients into dry until well combined.
  • Pour into 9×13-inch baking pan.
  • In small bowl, mix together oats, coconut oil, sugar and vanilla extract.
  • Spread oat topping evenly over cake and top with sliced plums.
  • Bake 40 minutes until toothpick comes out clean.
  • Slice and serve warm. Store leftovers covered in fridge.
