Taiwanese sticky rice also known as you fan or oil rice in Taiwan. It is a comforting and flavourful recipe made with sticky rice, mushrooms, shallots, and seasoned with soy sauce, hoisin sauce and sesame oil. The rice will be soft, chewy and absorbs all the rich umami flavour from the mushroom and vegetable stock.

I’ve been trying to use up the whole bag of sticky rice I brought back from our Japan trip this year. I’ve already made a few recipes like ice cream mochi, Filipino suman and Thai mango sticky rice. So far, everything has been a sweet recipe, so this time I wanted to make a savoury dish.

About Taiwanese Sticky Rice

That’s how I made this Taiwanese sticky rice with dried mushrooms. It’s a comforting and flavourful dish. It is so simple, easy to make recipes and perfect if you’re craving something warm and satisfying. 

Traditionally it is made with pork or dried shrimp, but I made a vegetarian version today using shiitake mushroom. It adds so much flavour and the depth of umami taste. The main trick for getting perfect sticky oil rice is , use generous amount of oil. Stir fry rice with the oil and sauces for few minutes until it gets toasty. Steam them while flipping often.

To make this dish, saute the shallots, carrot, shiitake mushroom, sticky rice, soy sauce and seasoning using sesame oil. Toss everything together until combined well and add mushroom stock, vegetable stock. Cook until the rice absorbs all the moisture. Then transfer the rice mixture to a parchment lined steamer basket, and steam for 40 minutes to an hour.

FAQ 

Q. Can I add fresh mushrooms instead of dried shiitake ? 

Fresh mushrooms can also be substituted but it won’t give the deep flavour like dried shiitake yields. 

Q. Can I add meat to this recipe? 

Yes, you can add chicken, shrimp, minced mutton or pork for a protein rich meal. 

Q. What if the rice feels too dry ? 

Add a splash of water or mushroom stock to adjust the moisture so that it doesn’t get dry. 

Q. How do I know when my rice is done ? 

The rice should look tender, sticky and translucent. And it shouldn’t look dry or too hard. 

Q. Can I make this in a rice cooker instead of a steamer ?

Yes you can cook the sticky rice in a rice cooker but steaming gives a better chewy texture. 

Ingredients

Toasted sesame oil – This oil has a nutty aroma that adds richness to the rice. It also helps the rice don’t stick to the bottom.

Shallots – Shallots have a mild, sweet flavour compared to regular onion. I have used 6 shallots that are finely chopped and added to the dish. 

Shiitake mushroom – Shiitake mushroom is a type of edible fungus that has a rich umami flavour. And the mushroom soaked water enhances the taste of the recipe. 

Carrot – 1 Carrot is finely chopped and added to the rice for texture and color. You can also add other vegetables of your choice like bell pepper, cabbage or beans. 

Sticky rice – This is the main ingredient for the recipe giving its signature chewy and soft texture. Wash and soak 1 cup of sticky rice in water for 4 hours or overnight. 

Sauces – Soy sauce ( 2 teaspoon ) and hoisin sauce ( 2 teaspoon ) are added for its umami taste and flavour. You can also add oyster sauce or chilli sauce. 

Vinegar – Balance the umami taste with a hint of acidity. 

Sugar – ½ teaspoon of sugar added to balance the savoury flavours and enhances the taste. 

Seasoning – Salt and pepper powder is added for the seasoning that brings out the overall flavours and balances the taste. 

Vegetable stock – 1 cup of vegetable stick is added to cook the rice and adds extra flavour. You can also substitute it with chicken stock. 

Spring onions – Finely chopped spring onions are used for garnishing which gives a fresh aroma. 

Step by Step Pictures

1)Wash and soak sticky rice in water for 3 to 4 hours or overnight. Soak dried shiitake mushrooms in water for 1 hour. Strain the mushroom and cut into small pieces. Reserve the soaking liquid as it is packed with umami flavour. 

2)Heat sesame oil in a pan, add in shallots.

3)Add in mushrooms and carrots saute for 2 minutes. 

4)Stir fry for few minutes.

5)Then add in strained sticky rice and stir fry for 4 to 5 minutes.

6)Now add in hoisin sauce, soy sauce, vinegar, salt, sugar and pepper.

7)Toss it well and fry the rice in the flavoured oil for 4 to 5 minutes. 

8)Pour in the strained mushroom stock.

9)Pour in vegetable stock.

10)Mix and cook until the rice absorbs all the liquid. 

11)Cook rice until it absorbs all the liquid.

12)Now transfer this to a parchment lined steamer basket. Spread evenly and make multiple holes in between. 

13)Place this on a steamer and steam cook for 40 minutes to 1 hour.

14)Every 15 minutes flip the rice so it steams evenly.

15)Taste and check whether the rice is cooked completely. 

16)Garnish with spring onions and enjoy. 

Expert Tips

  • Soak the sticky rice at least for 2 hours or overnight. This helps it cook faster and prevents it from becoming mushy. 
  • Don’t discard the soaked mushroom water, keep it aside. This liquid is full of umami flavour that adds great moisture and aroma to the rice. 
  • When you mix the rice with stock and sauces, use a spatula to lift and fold the rice. Don’t overmix it, otherwise the rice will turn mushy.
  • Add generous sesame oil for extra flour and also it prevents rice from sticking to the bottom. 
  • Instead of vegetable stock, you can also add chicken stock for extra flavour. 
  • When placing the rice in the steamer basket, put some holes in between for even cooking.
  • Also at an interval of 10 to 15 minutes, open the steamer, flip the rice, cover and cook until it is done. 

Storage & Serving

Store the leftover rice in an airtight container and it stays good in the refrigerator for 3 to 4 days. And reheat using a microwave before serving. 

Serve this delicious Taiwanese sticky rice with chilli chicken, grilled chicken or with simple vegetable salad for a complete and satisfying meal.
