These pumpkin pie bars were highly requested over on my YouTube Channel and here on the blog! After a bit of testing (and plenty of taste testers–pumpkin pie is NOT my favorite!), I ended up pairing the crust from my pecan pie bars and the filling from my pumpkin pie recipe. The result? A thick, buttery shortbread-esque crust that holds a nice texture beneath perfectly spiced and creamy pumpkin pie filling. Best served beneath a healthy dollop of homemade whipped cream–yum!
