This homemade coleslaw is very simple to make. You just need a large bowl and a spoon. If you need to cut any of the ingredients, you’ll also need a cutting board and a sharp knife.

  • Shredded cabbage or raw cabbage: You can either use a prepackaged bag of coleslaw mix or make some yourself from raw cabbage. You just need to grate or shred some red or green cabbage and carrots using a food processor or a grater.
  • Sliced almonds: Use either sliced or whole almonds. Sunflower seeds work well, too.
  • Pecans: I like to use pecan halves, but you can use whole pecans and loosely chop them yourself. 
  • Dried sugar-free cranberries: I get my dried sugar-free cranberries from Amazon, but your local grocery store might carry it. Make sure to check the label and ingredients to avoid getting one with hidden sugars.
  • Apple cider vinegar: This will give the coleslaw a slightly tangy taste. You can use white vinegar instead if you prefer.
  • Sweet Mayonnaise dressing: You can either buy your creamy dressing or make it from scratch. Or you can use your favorite salad dressing.
  • Monk fruit sweetener: (optional) This is my favorite sugar-free sweetener. You can use your favorite here or skip it altogether.
  • Spices: Season to taste with black pepper and salt.

🔪 How To Make Cranberry Almond Coleslaw

  1. Chopped the pecans if they are whole.
  2. Mix sugar-free mayonnaise, apple cider vinegar, salt, and pepper together in a small bowl.
  3. Pour in the coleslaw (or cabbage mixture), sliced almonds, pecans, and dried cranberries in a large plastic bowl.
  4. If you don’t have prepackaged coleslaw, then finely chop one small cabbage into small shreds.
  5. Pour in the dressing over the coleslaw and mix together.
  6. Add more sweetener if desired.
  7. Refrigerate or serve immediately!

  • I prefer using a prepackaged shredded cabbage mix to save on time, but you can easily slice your own cabbage with a mandolin or the slicing attachment on your food processor.
  • Look for the right cranberries. Fresh cranberries are very bitter and tart, and dried cranberries are loaded with sugar. Look for freeze-dried or sugar-free dried cranberries instead.
  • Use your favorite sugar-free dried fruit or nuts for an exciting combination.
  • Thinly sliced red onion can add a nice crunchy, savory flavor to this great side dish.
  • You can make this coleslaw spicy but using a spicy mayonnaise dressing.
  • If you don’t want a sweet dressing, you can use this plain mayonnaise dressing.
  • Not strict about saying keto? This easy side dish also tastes wonderful with fresh apples. One Granny Smith apple would add about 12 net carbs to the nutritional facts for the whole salad.
