Ingredients

  • 1 cup walnut halves toasted, plus more to garnish
  • 1 cup crumbled feta cheese packed in brine, brine reserved
  • 1/2 cup plain Greek yogurt
  • 1 Tbsp. olive oil plus more to garnish
  • 2 tsp. lemon zest
  • 1 tsp. dried oregano
  • 1 tsp. fresh thyme leaves plus more to garnish
  • Ground black pepper to taste
  • Fine sea salt to taste

For Serving

  • Flatbreads
  • Crackers
  • Pita chips
  • Sliced raw vegetables

Instructions

  • In bowl of food processor, pulse toasted walnuts until crumbly, about 10 seconds.
  • Add feta cheese, Greek yogurt, olive oil, lemon zest, dried oregano and fresh thyme leaves and process on high speed until well combined, about 1 minute.
  • Add reserved feta brine, 1 tsp. at a time, until smooth and creamy. Season with ground black pepper and fine sea salt to taste.
  • Scoop into bowl. Garnish with fresh thyme leaves, toasted walnuts and olive oil.
  • Serve immediately, accompanied by flatbreads, crackers, pita chips and/or sliced raw vegetables.
  • Refrigerate leftovers for up to 3 days.
