Ingredients
- 12 oz. organic cream cheese softened
- 1/2 cup cashew butter
- 1/3 cup powdered monkfruit sweetener
- 1/3 cup chocolate protein powder
- 2 Tbsp. cocoa powder
- 1 tsp. vanilla extract
- 1/3 cup mini chocolate chips
Coating
- Dark chocolate chips
- Homemade candy eyes
- 2 white chocolate chips
- Gluten-free cookies
Instructions

In large bowl, use hand mixer to whip cream cheese and cashew butter together until smooth.

Add remaining ingredients and whip again.

Fold in 1/3 cup mini dark chocolate chips.

Place in plastic wrap and shape into large ball. Place in freezer for 30 min to hold shape.

Once firm, remove from wrap, smooth out shape with spatula and cover in dark chocolate chips, leaving room for eyes, two white chocolate chips for teeth and half of one chocolate cookie for each ear.

Serve with gluten-free pretzels, graham crackers apple slices or strawberries.
