Ingredients

  • 6 large tortillas

Roasted Vegetables

  • 2 tsp. pink salt divided
  • 2 tsp. black pepper divided
  • 1/2-1 tsp. Simply Organic Onion & Chives Dip Mix save the rest for dipping sauce
  • 1 tsp. granulated maple sugar
  • 1/8 tsp. ground nutmeg
  • 1/2 head kabocha squash or butternut squash cubed
  • 1 15- oz. can garbanzo beans
  • 2 Tbsp. extra virgin olive oil

Sauteed Vegetables

  • 2 Tbsp. ghee
  • 1/2 cup cauliflower florets
  • 1/2 cup broccoli florets
  • 1/2 cup leeks sliced thin
  • 1/2 cup corn
  • 1/2 cup portobello mushrooms sliced thin
  • 1/2 cup purple cabbage julienned
  • 1 onion divided
  • 1/4 cup cilantro
  • 2-4 leaves dino kale sliced
  • 1 small sweet red chili diced
  • 2 carrots julienned
  • 1 small yellow zucchini julienned
  • 1 small green zucchini julienned
  • Optional: 2 tsp. raw honey

Yogurt Dip

  • Remaining Simply Organic Onion & Chives Dip Mix
  • 1/3 cup Greek yogurt
  • ¼ cup sour cream

Instructions

  • Preheat oven to 400 degrees F.
  • Add kabocha squash, garbanzo beans and ½ sliced onion to baking sheet. Sprinkle with salt, ½ tsp. Simply Organic Onion & Chives mix and add olive oil. Roast 25 minutes or until squash is tender.
  • Remove from oven and sprinkle with nutmeg and maple sugar.
  • Add ghee to large sauté pan and fill with remaining vegetables or sauté vegetables individually, keeping in mind that vegetables have different cook times. Sprinkle with 1 tsp. salt.
  • To make yogurt sauce, combine Greek yogurt, sour cream and remaining Simply Organic Onion & Chives Dip mix.
  • To assemble, add vegetables to large tortilla and garnish with cilantro and yogurt onion chives sauce. Add more salt if needed.
