Ingredients
- 1 lb. ground turkey
- 30 oz. (2 cans) pinto beans drain 1 can
- 15 oz. finely chopped tomato
- 1 tsp. salt
- 2 tsp. cumin
- 2 tsp. chili powder
- 1/4 tsp. paprika
- 1/4 tsp. oregano
- 1/4 tsp. black pepper
Toppings
- 1-1/2 cups shredded cheddar cheese
- 4 Tbsp. chopped scallions
Instructions

In medium saucepan over medium heat, cook ground turkey, breaking up meat with back of spoon. When cooked through, drain excess fat.

Stir in beans, tomato and spices. Cover and simmer, stirring occasionally, at least 20 minutes.

To serve, top with chopped scallions and shredded cheese.
