Ingredients

Blackberries

  • 3 cups blackberries
  • 2 Tbsp. sugar
  • 1 Tbsp. lemon juice

Shortcakes

  • 2 cups all-purpose flour
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup buttermilk
  • Heavy cream for brushing tops
  • Coarse sugar for sprinkling

Whipped cream

  • 1 cup heavy whipping cream
  • 2 Tbsp. sugar
  • 1 tsp. vanilla extract

Instructions

  • In medium bowl, mix blackberries with sugar and lemon juice. Stir gently, then let sit at room temperature for 30 minutes until juicy.
  • Preheat oven to 425 degrees F. Line baking sheet with parchment paper.
  • In large bowl, whisk flour, sugar, baking powder, baking soda and salt. Cut in cold butter with pastry cutter or fork until mixture resembles coarse crumbs.
  • Add buttermilk and stir just until dough forms. Do not overmix.
