For meatballs: Minced chicken absorbs flavours and forms the base of the meatballs. Spices like chilli and pepper as seasoning. I also add coriander leaves, chillies, parmesan cheese, breadcrumbs and Italian seasoning to make meat ball.

Tomato Sauce: tomatoes forms the tangy base of the sauce. For flavouring add in garlic, onion, green chillies, oregano, basil, ketchup, chilli, pepper, salt, sugar and coriander leaves.

For Sandwich: White bread slices main ingredient of the sandwich. I also add cheese, herbs and butter.

Expert tips

  • Keep meatballs uniform in size. This ensures even cooking and prevents some from drying out.
  • Don’t over mix the meat. It can make the meatballs dense instead of tender.
  • Simmer the sauce gently. Low heat helps flavours develop without burning the tomatoes.
  • Drain excess oil. It prevents the sandwich from becoming greasy.
  • Use freshly grated cheese. It melts better and has a richer taste than pre shredded varieties.
  • Toast bread on medium heat. It avoids burning while allowing the cheese to melt fully.
