Banana bread:
– 1 tbsp flax meal + 1/4 cup soy milk to make 1 flax egg
– 3 ripe bananas
– 1/4 cup almond butter
– 3 tbsp neutral oil (I used rice bran)
– 2/3 cup coconut sugar
– 1 cup soy milk
– 2 cups almond meal
– 1 + 1/2 cups gluten-free plain flour
– 1 tsp baking soda
– 1/4 tsp salt
*Bake for 50-60 minutes, or until a knife comes out clean*
Biscuit fudge:
– 300g coconut condensed milk
– 150g dark chocolate
– 3/4 cup vegan butter
– 200g gluten-free biscuits
– 2 tbsp cocoa powder
– 1/2 tsp salt
– crushed pistachios (as desired)
*Set in the fridge or freezer for 2 hours*
