Ingredients

Slaw

  • 4 cups shredded carrots
  • 1/2 cup golden raisins
  • 1/4 cup dry roasted cashews roughly chopped
  • 1/4 cup chopped green onions
  • 1/4 cup loosely packed cilantro chopped

Curry Yogurt Dressing

  • 1 tsp. honey or maple syrup
  • 1/2 cup plain Greek yogurt or dairy-free alternative
  • 1 Tbsp. avocado oil
  • 1 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1 tsp. curry powder
  • 1/2 tsp. garlic powder
  • 1/8 tsp. black pepper
  • 1/4 tsp. salt
  • 1-2 Tbsp. water for thinning if needed

Instructions

  • To make dressing, whisk together all ingredients, using water only if needed. Taste and adjust seasoning, adding more lemon juice or salt, if desired.
  • In large bowl, combine shredded carrots, golden raisins, toasted pistachios, scallions and fresh cilantro.
  • Serve immediately for best taste and texture.
