- Olive oil: I use this to brown the stew beef before it goes into the crockpot. Browning the meat before adding it will caramelize the outside of the meat, which adds a depth of flavor.
- Spices: I use a mix of cumin, curry powder, smoked paprika, cayenne pepper, ginger, salt, and pepper. The cayenne can be left out, increased, or decreased to reach your desired flavor.
- Vegetables: I use diced tomatoes, garlic, and onion.

- Pour the olive oil into a large frying pan and let it heat up. You want it hot enough to sauté the meat.
- Once the oil is hot, add the stew beef to the pan. Let it cook for about 5 minutes, and stir it a few times to be sure all sides get cooked. You want the outside to be brown so that it caramelizes and traps in the flavor of the meat.
- Once the stew meat edges have browned, remove it from the pan and transfer it to the slow cooker.
- Once you have added the meat to the crockpot, add the spices, diced tomatoes, garlic, chopped onion, and coconut milk to the slow cooker.
- Turn on the slow cooker and place the lid on. Cook the curry mixture on low for 8 hours or high for 4 hours.
- After it has finished cooking, taste for salt and add more if desired.

Instructions
In a large pan,pour in the olive oil.
2 tablespoon olive oil
Add the stew beef and brown it for aboutr 5 minutes,stirring a few times.
2 lbs stew beef
Take the stew beef out of the pan and place it in the slow cooker.
Add all the other ingredients to the slow cooker.
½ onion,2 garlic cloves,1 cup full fat coconut milk,1 can diced tomatoes,2 teaspoon cumin,2 tablespoon curry,1 teaspoon smoked paprika,½ teaspoon cayenne pepper,½ teaspoon ground ginger,½ teaspoon salt
Cook on low for 8 hours.
Or if you’re in a hurry,cook on high for 4 hours.
Taste for salt and adjust,if needed.
