Sunday walli chicken curry🍗

No idea why but Sundays without chicken curry feel so incomplete. There has to be one or the other preparation of chicken on Sunday!

Ingredients I used:
– 1 kg chicken
– 3 tbsp oil
– 2 bayleaves/tejpatta
– 2 cardamoms/elaichi
– 1 black cardamom/badi elaichi
– small piece of cinnamon
– 1/2 star anise
– 3 onions, roughly chopped
– 2 tsp ginger garlic paste
– 2 to 3 green chillies, slit
– 2 to 3 tomatoes, finely chopped
– salt
– 2 tsp red chilli powder (customize as preferred, I prefer the curry spicy so added more)
– 1 tsp coriander powder
– 3/4 tsp cumin powder
– 2 tsp chicken masala
– coriander leaves, finely chopped
– 1 cup water

Procedure:
– Heat oil in a pan, add whole spices and stir till fragrant.
– Add onions and fry till they turn dark brown (like shown in the video). Darker the onions, tastier the gravy.
– Add ginger garlic paste and green chillies. Stir well till the paste doesn’t smell raw anymore.
– Add tomatoes and all above mentioned masalas. Mix well and cook till tomatoes are mushy.
– Add chicken and fry for 5-7 mins at least.
– Keep it covered without adding water and let chicken cook for few mins in its own water.
– Add 1 cup water and let it cook again, covered for 7-10 mins.
– Garnish it with coriander leaves.
