Ingredients
Waffles
- 1-1/2 cup zucchini shredded
- 1-1/2 cup gluten-free flour
- 1 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 cup cheddar cheese shredded
- 1 cup milk
- 2 eggs
Dressing
- 1 Tbsp. lemon juice
- 1 garlic clove minced
- 1 cup yogurt
- 1/2 tsp. salt
Instructions
Waffles

Shred zucchini and set aside.

In medium bowl, mix flour, baking powder, salt, garlic powder and onion powder.

Add milk and eggs. Mix them with dry ingredients until batter forms.

Fold in zucchini and cheese.

Heat waffle iron and brush with oil or melted butter. Cook each waffle until golden brown for about 5 mins.

Serve with lemon garlic yogurt dressing.
Dressing

In blender or food processor, blend yogurt, lemon juice, garlic and salt. Drizzle on warm waffles before serving.

Waffles can be stored in fridge in airtight container or zip lock bag for few days.
