This step ensures the beans release their natural flavors. Stir constantly for even roasting, which takes about 5-10 minutes.
Once the beans have cooled down, grind them coarsely using a coffee grinder or a mortar and pestle. You want a coarse grind similar to sea salt.
In a saucepan, bring 2-3 cups of water to a boil. Add the ground coffee, crushed cardamom pods, cloves to the boiling water. Reduce the heat to low and simmer the mixture for about 10-15 minutes, allowing the flavors to infuse.
