Ingredients
- 2 cups fresh peaches coarsely chopped
- 1/2 cup light brown sugar packed
- 1/2 cup pecans chopped
- 1 Tbsp. vegan better
- 1/2 cup yellow onion diced
- 1/2 tsp. garlic powder
- 1/4 tsp. chipotle powder
- 1 cup cola-flavored carbonated beverage
- 2 tsp. cornstarch
- 8 oz. dairy-free cream cheese softened
Instructions

In large skillet over medium heat, melt vegan butter. Add diced onion and cook for about 8 minutes, or until softened.

Stir in garlic powder, cola, cornstarch, chipotle powder and brown sugar.

Bring mixture to boil. Reduce heat to low and simmer for 15 minutes or until mixture is reduced and starts to thicken, stirring occasionally.

Stir in peaches and most of pecans (reserving some pecans for topping). Simmer until heated through. Remove from heat and let it cool slightly.

Spread room temperature dairy-free cream cheese evenly on bottom and up the sides of medium sized bowl.

Spoon peach mixture on top of cream cheese. Top with reserved chopped pecans.

Serve warm with crackers or toasted bread.

Store leftovers in airtight container and refrigerate for up to 4 days.
