Ingredients

  • 2 cups fresh peaches coarsely chopped
  • 1/2 cup light brown sugar packed
  • 1/2 cup pecans chopped
  • 1 Tbsp. vegan better
  • 1/2 cup yellow onion diced
  • 1/2 tsp. garlic powder
  • 1/4 tsp. chipotle powder
  • 1 cup cola-flavored carbonated beverage
  • 2 tsp. cornstarch
  • 8 oz. dairy-free cream cheese softened

Instructions

  • In large skillet over medium heat, melt vegan butter. Add diced onion and cook for about 8 minutes, or until softened.
  • Stir in garlic powder, cola, cornstarch, chipotle powder and brown sugar.
  • Bring mixture to boil. Reduce heat to low and simmer for 15 minutes or until mixture is reduced and starts to thicken, stirring occasionally.
  • Stir in peaches and most of pecans (reserving some pecans for topping). Simmer until heated through. Remove from heat and let it cool slightly.
  • Spread room temperature dairy-free cream cheese evenly on bottom and up the sides of medium sized bowl.
  • Spoon peach mixture on top of cream cheese. Top with reserved chopped pecans.
  • Serve warm with crackers or toasted bread.
  • Store leftovers in airtight container and refrigerate for up to 4 days.
